Many people don't know what poultry shows are: they serve exactly the same function as dog shows. People very carefully breed their birds to meet recognized standards for the breed, then take their best ones to shows where judges choose the best. Oftentimes they'll shampoo the birds and oil down their feathers to make them glossy like the ones here.
